Hawley Bed & Breakfast Crustless Quiche
Spray a pie dish or pan.
8 oz or more of vegetables frozen, thawed or fresh (I like chopped spincach frozen 10 oz box thawed and squeezed to remove liquid, & frozen mixed vegetables, 8-16 oz thawed)
Place in the pie pan.
1 cup sour cream
1 cup cottage cheese
1/2 cup bisquick
2 eggs
1/4 cup melted butter or olive oil or cannola oil
Whisk ingredients together. Pour about half the mix into the pie pan with vegetables and mix together. Then top off with the rest of the mix.
Top with 1/4 cup crumbled cooked bacon and 1/4 cup parmesan cheese
Decorate the top with sliced tomatoes or other vegetables.
Cook at 350 degrees 35 minutes.
Let set 5 minutes.
Cut into 6 or 8 pieces and serve.

- Hawley House
- John and Peggy have been married 46 years. John semi retired January 2007 and is fully retired in the summer of 2008. Peggy works full time at the University of Nebraska. We have 2 children Robert and Leeza. We also have 8 grandchildren. All live in Lincoln and we enjoy having them close. The Hawley Bed & Breakfast was open for 6 years. Now the Hawley House is in an 1890's Victorian built as two town homes that has been opened into one home and is a local historical landmark. We will be moving into the home in 2011 from across the street. We have 3 dogs Miko (12), Snoopy (10) & Sophie (8).
